Ingredients

  • Rainbow Carrots
  • Easter Egg Radish
  • Lacinato Kale
  • Baby Spinach
  • Broth of choice
  • Shallots
  • Ginger
  • Garlic
  • Salt and Pepper to taste

Instructions

Stay warm during this rainy season with this easy nourishing soup.

Directions:

  1. Chop Rainbow Carrots and Easter Egg Radish into cubes.
  2. Coarsely chop Lacinato Kale and Baby Spinach.
  3. Mince garlic, ginger, and shallots.
  4. In a deep dish, saute shallots and garlic until aromatic. Add Rainbow Carrots and Easter Egg Radish. Stir fry for 3 minutes or until slightly charred. 
  5. Add broth and bring to a boil. Simmer until the veggies are tender. 
  6. Add Lacinato Kale and Baby Spinach and turn off the heat so that the leaves don’t overcook. 
  7. Add salt and pepper to taste.
  8. Optional: serve with crispy fried tofu on top.

Our produce is picked to order on Thursdays. Order by Wednesday at 7 am to receive it on the weekend. Each box contains between 8-12 items each week.
