Creamy Salanova and Fennel Soup
- Red Oak Salanova
- Green Oak Salanova
- Vegetable Broth
- Salt and Pepper to taste
Cozy weather calls for soup, so we’ve got a tasty soup for you that won’t even need lots of chopping.
- Roughly chop Red Oak Salanova, Green Oak Salanova, Fennel, Shallots, and Garlic.
- In a large saucepan, melt butter over medium heat. Add shallots and garlic. Sauteé until tender. Mix in the Salanovas and Fennel, and add vegetable broth. Bring the soup to a boil and simmer until all the vegetables are tender.
- Blend the soup in a blender until smooth. Pour back to the saucepan and add salt and pepper to taste. Add broth to adjust consistency to your liking.
