Heirloom Tomato Tart

Directions: 

For the Parmesan Crust

  1. In a food processor, combine the all-purpose flour, grated Parmesan cheese, and salt. Pulse a few times to mix the ingredients.
  1. Add the cold diced butter to the food processor and pulse until the mixture resembles coarse crumbs.
  1. Gradually add the ice-cold water, one tablespoon at a time, while pulsing the food processor, until the dough starts to come together. Be careful not to overmix.
  1. Turn the dough out onto a lightly floured surface and gently knead it a few times to form a smooth ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

For the Tart Filling

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch tart pan with a removable bottom and set it aside.
  1. In a small bowl, mix together the minced garlic and extra-virgin olive oil. Let it sit for a few minutes to infuse the oil with the garlic flavor.
  1. Roll out the chilled Parmesan crust dough on a floured surface to fit the tart pan. Carefully transfer the dough to the prepared tart pan and press it into the bottom and sides.
  1. In the tart crust, evenly spread half of the shredded mozzarella cheese.
  1. Arrange the thinly sliced heirloom tomatoes on top of the mozzarella layer, slightly overlapping each other.
  1. Drizzle the garlic-infused olive oil over the tomato slices, ensuring they are all coated.
  1. Sprinkle the remaining shredded mozzarella cheese and grated Parmesan cheese on top of the tomatoes.
  1. Season the tart with salt and black pepper to taste. Sprinkle the fresh basil and thyme leaves over the tart.

Baking the Heirloom Tomato Tart

  1. Place the tart pan on a baking sheet to catch any potential drips. Bake the tart in the preheated oven for 30-35 minutes or until the crust is golden and the tomatoes are tender.
  1. Once baked, remove the tart from the oven and let it cool in the pan for a few minutes.
  1. Gently remove the outer ring of the tart pan, and transfer the tart to a serving platter.
