  1. Preheat your oven or toaster oven to medium-high heat.
  2. Toast the sourdough bread slices until golden and crispy.
  3. In a food processor, combine the lettuce leaves, basil leaves, grated Parmesan cheese, pine nuts, minced garlic, and a pinch of salt and pepper.
  4. Slowly drizzle in the extra virgin olive oil while pulsing the mixture, until it forms a smooth and creamy pesto consistency.
  5. Taste the pesto and adjust the seasonings if needed.
  6. Spread a generous amount of the lettuce pesto onto each toasted sourdough slice.
  7. Optionally, you can top it with extra grated Parmesan cheese or a sprinkle of pine nuts for added flavor and crunch.
  8. Place the prepared toasts back in the oven for a minute or two, just until the cheese melts or the toppings slightly toast.
  9. Remove the toasts from the oven and let them cool slightly.
  10. Serve the Lettuce Pesto Sourdough Toasts as an appetizer, snack, or light meal option.

Feel free to get creative with additional toppings like cherry tomatoes, sliced avocado, your favorite hot sauce, or a drizzle of balsamic glaze. Bon appétit!
