Ingredients

  • Blue Oyster Mushrooms
  • Tofu
  • Onion
  • Garlic
  • Soy Sauce
  • Lime Juice
  • Vegan Mayonnaise
  • Extra Virgin Olive Oil
  • Chili Peppers (optional)
  • Green Onions

Instructions

A healthy take on the classic Filipino sisig. 

Directions

  1. In a medium saucepan or sizzling plate, fry the tofu until the skin crisps and turns golden brown. Transfer tofu to a separate plate.
  2. Heat Extra Virgin Olive Oil in a medium saucepan. Saute garlic and onions until aromatic.
  3. Add sliced Blue Oyster Mushrooms to the pan and cook until softened (or crispy, depending on your preference). Stir occasionally to ensure even cooking.
  4. In a small bowl, mix soy sauce, vegan mayonnaise, and lime juice. Pour the mixture into the pan and stir to coat all ingredients. Let the mushrooms absorb the sauce for about 2-3 minutes.
  5. Add chili peppers (optional) and stir to incorporate.
  6. Add the fried tofu back and stir.
  7. Turn off the heat and serve with green onions on top and lime wedges on the side.
