Simply Scrumptious Sunchokes by Chef Tara Middleton

  • 5 sunchokes, washed & cut in half
  • 2 Tbsp ghee (or avocado oil as a plant-based option)
  • Pinch of sea salt
  • 3-4 sprigs fresh thyme
  • 3 cloves garlic, minced


  1. Boil sunchokes for about 20 minutes or until tender (test with fork). Set aside.
  2. Once cool, slice sunchokes into 1/4 inch slices. 
  3. Add garlic and ghee (or oil) to a pan and lightly brown the garlic over medium heat. Add sliced sunchokes, pinch of sea salt and thyme (off the stem) to the pan and toss to coat all slices! 
  4. Let sit for 5 minutes on each side to brown, checking regularly to make sure they don’t burn.
  5. Taste test, season with a bit more salt if needed and serve!
  6. *If you prefer to roast for a similar texture, place the sunchokes in the oven at 400 degrees for 10-15 minutes or until golden brown!
