- 5 sunchokes, washed & cut in half
- 2 Tbsp ghee (or avocado oil as a plant-based option)
- Pinch of sea salt
- 3-4 sprigs fresh thyme
- 3 cloves garlic, minced
Instructions
- Boil sunchokes for about 20 minutes or until tender (test with fork). Set aside.
- Once cool, slice sunchokes into 1/4 inch slices.
- Add garlic and ghee (or oil) to a pan and lightly brown the garlic over medium heat. Add sliced sunchokes, pinch of sea salt and thyme (off the stem) to the pan and toss to coat all slices!
- Let sit for 5 minutes on each side to brown, checking regularly to make sure they don’t burn.
- Taste test, season with a bit more salt if needed and serve!
- *If you prefer to roast for a similar texture, place the sunchokes in the oven at 400 degrees for 10-15 minutes or until golden brown!
