  1. Cut the top of the Tomatillo and carve out the inside with a spoon. Set aside.
  2. In a medium pan, heat the oil and saute garlic and onion until fragrant. Add black beans and rice. Add the insides of the Tomatillo and mix. Sprinkle oregano, basil, paprika, and salt and pepper.
  3. Spoon the stuffing into the hollow Tomatillos and make sure that they are well packed. Add crumbled feta on top. Place the Tomatillo  tops back on, and place them into a baking dish. 
  4. Bake for 30 mins and serve.
