Watermelon and Passionfruit Salad with Purslane, Mexican Mint, and Armenian Cucumbers

Ingredients

  • 2 cups watermelon, cubed
  • 2 passionfruits, pulp scooped out
  • 1 cup purselane leaves, washed and dried
  • 1 cup fresh mint leaves
  • 1 Armenian cucumber, thinly sliced
  • Juice of 1 lime

Instructions

  1. In a large bowl, combine the cubed watermelon and passionfruit pulp.
  2. Squeeze lime juice over the fruit mixture.
  3. Add fresh mint leaves for a refreshing flavor.
  4. Gently toss the fruit mixture to combine everything.
  5. Add purselane leaves and thinly sliced Armenian cucumbers and gently toss.
  6. Serve chilled.
