- 2 cups watermelon, cubed
- 2 passionfruits, pulp scooped out
- 1 cup purselane leaves, washed and dried
- 1 cup fresh mint leaves
- 1 Armenian cucumber, thinly sliced
- Juice of 1 lime
Instructions
- In a large bowl, combine the cubed watermelon and passionfruit pulp.
- Squeeze lime juice over the fruit mixture.
- Add fresh mint leaves for a refreshing flavor.
- Gently toss the fruit mixture to combine everything.
- Add purselane leaves and thinly sliced Armenian cucumbers and gently toss.
- Serve chilled.
